The key to bringing out their meaty magic is to cook beef cheeks low and slow, until they're fall-apart tender, typically accomplished by braising or smoking for several hours.
Beef cheek meat is a great option for a variety of meals from tacos to elegant braised dishes, or as a unique and memorable appetizer. One of our favorite uses is to throw them on the smoker when smoking a brisket or short ribs. Due to their smaller size, they'll cook faster than the brisket/ribs, and will leave you with a tasty BBQ snack to eat while main meal is finishing up.
