CARNE ASADA SKIRT STEAK QUESADILLA

From the carne asada marinated Certified ONYA® Skirt Steak, to the jalapeño cream sauce, this recipe is packed with flavor and overflowing with cheesy goodness. This quick and easy meal makes an excellent option for everything from a weeknight meal to a tasty appetizer at your next backyard grill out.

Marinating your skirt steak in the carne asada marinade for several hours in the refrigerator prior to cooking will add flavor to the final product.
Skirt steak is best when cooked hot and fast over direct heat. Since this cut is naturally thin, it will not take long to reach medium-rare.
High-heat searing will develop a beautiful crust on the outside of your skirt steak, while the inside stays juicy and medium rare.
Due to its prominent and long muscle fibers, it is important to slice a skirt steak against the grain before eating. This will make the steak more tender and significantly easier to chew.
It is recommended to dice the skirt steak into small pieces before assembling your quesadilla. This will allow you to take bites more easily without pulling the quesadilla apart.
Assemble the quesadilla while grilling the tortilla in a cast iron pan. This allows the cheese to melt and hold the skirt steak pieces in place.
Assemble your quesadilla, dip it in the jalapeño cream sauce, and enjoy!
Carne Asada Marinade:
• 3 cloves garlic
• 1 Tbsp cumin
• 2 Tbsp soy
• 1 tsp salt
• 1 tsp pepper
• 1/2 cup neutral oil (I used peanut)
• Juice of 1 lime
Jalapeño Cream Sauce:
• 1/4 cup Mayo
• 1/4 sour cream
• 1 Tbsp jalapeños
• 3 Tbsp jalapeños juice (you can use more if you want it more runny)
• 1 tsp paprika
• 1 tsp cumin
• 1 tsp onion powder
• 1/2 tsp granulated garlic
• 1/4 tsp salt
• 1/4 tsp chili powder
• Marinate your skirt steak in Carne Asada marinade above
• Make your jalapeño cream sauce
• Sear your steak 2 min each side till medium rare
• Cut across the grain into bite size pieces
• Make your quesadilla
• Tortilla, cheese, steak, cheese, jalapeño cream, tortilla
• Serve with more jalapeño cream and enjoy!
