GRILLED FLANK STEAK SALAD
A Summertime Essential
This loaded steak salad is a must-make recipe that will surely hit the spot when you're looking for a fresh and flavorful summertime meal. Layered with ingredients including tomatoes, avocados, grilled corn salsa, and a homemade chimichurri dressing, the grilled Certified ONYA® Flank Steak really is the cherry on top of an already fantastic salad. RECIPE
• Marinate your Certified ONYA® flank steak for 2-3 hours (marinade recipe below)
• Make your chimichurri dressing (recipe below)
• Once your grill is hot, grill your corn until cooked and then cut off the cob and build your salad (below)
• Grill your flank steak on the Burch Barrel for 3-4 minutes each side until an IT of 130°
• After a 10 minute rest, slice your steak across the grain and build your salad with lettuce, tomatoes, corn salad, avacado, flank steak, dressing, gorgonzola cheese, cilantro & fresh lime juice

Grilled Flank Steak:
• Flank Steak
• 3 tbsp olive oil
• 2 limes (zest & juice)
• 1 tsp salt
• 2 tsp smoked paprika
• 2 tsp chili powder
• 1 ½ tsp ground coriander
• 1 tsp ground cumin
• 6 minced garlic cloves
• 3 tbsp fresh chopped cilantro
Corn Salsa:
• 2 to 3 ears of sweet corn
• 1/4-1/3 cup of mayo
• Ancho Chili Lime taco rub (or any taco rub you prefer)
Chimichurri Dressing:
• 1 bunch fresh cilantro
• 1 bunch fresh parsley
• 1 avocado
• Juice from 1 lime
• 5 garlic cloves
• 1 tsp salt
• 1/3 cup olive oil
• 1 tsp chili pepper flakes, optional
